Do you love pancakes? I do! Not exactly the healthiest of breakfasts, but after a long morning walk I felt like a treat. But instead of making them with wheat flour I used a small amount of coconut flour.
This recipe is paleo friendly, gluten free, sugar free (except for 1 banana), and very satisfying!
- 1 banana
- 2 eggs
- 3 tablespoons of full fat coconut cream 1/2 tsp apple cider vinegar
- 1/2 tsp vanilla bean powder (I used fresh vanilla pods)
- 1/2 tablespoons of coconut flour
- 1/2 tsp cinnamon
- 1/4 tsp baking soda
- 1 small pinch of salt
- Organic butter/ ghee/ or coconut oil of frying
Mash banana, eggs, vanilla, and apple cider vinegar together and woks until combined. In a separate bowl mix all other ingredients (except butter).
Combine both sets of ingredients and mix well, then cook on medium heat on the fry pan with plenty of butter (or alternatives)
Enjoy! I garnish mine with some left per coconut milk and a fresh strawberry. Makes 2 large pancakes. Xc
